Somen

No better way to usher in hot weather than this classic Japanese summer dish -- somen.  There are a lot of ways to eat somen, but Jeff's family usually sticks to green onions (negi), cucumber, sliced ham, tomatoes (when in season), and wasabi.  Jeff makes his own tsuyu, which is the dipping sauce for the noodles, and that takes a bit more effort, but if you buy the tsuyu it's just a matter of cooking the noodles for three minutes and slicing up the condiments.  With a cold glass of mugicha (the roasted barley tea you see here), it's the perfect quick summer lunch.
