No better way to usher in hot weather than this classic Japanese summer dish --
somen. There are a lot of ways to eat somen, but Jeff's family usually sticks to green onions (
negi), cucumber, sliced ham, tomatoes (when in season), and wasabi. Jeff makes his own
tsuyu, which is the dipping sauce for the noodles, and that takes a bit more effort, but if you buy the tsuyu it's just a matter of cooking the noodles for three minutes and slicing up the condiments. With a cold glass of
mugicha (the roasted barley tea you see here), it's the perfect quick summer lunch.
